A konro is a long, narrow, diatomaceous-earth box that holds a thin bed of charcoal directly under skewers resting on the rails. The proportions are the point: food sits three or four inches above the coals and cooks in minutes with constant turning.
It is built for binchotan, Japanese white charcoal, which produces almost no smoke or flame and just even radiant heat for hours. That combination is what yakitori needs. There are now excellent British-made konro grills as well as Japanese imports.
