How to choose

The most important feature on a barbecue board is a deep groove around the edge, because everything you cook here releases liquid when you cut it and a board without a moat puts that liquid on the floor. Size matters too: a whole brisket needs room.

End-grain wood boards are kindest to knife edges and, kept oiled, last decades. Keep separate boards for raw and cooked meat, colour-coded if that helps you remember, because cross contamination from a raw-meat board to cooked food is the most common way barbecue makes people ill.
