How to choose
A plancha is a thick flat plate heated from below, and it unlocks the entire category of food that a grate cannot handle: prawns, scallops, eggs, chopped vegetables, smash burgers, onions, anything small or delicate.
Because the surface is unbroken, fat does not drip into the fire, so there are no flare-ups and nothing tastes of soot. Get it properly hot before anything touches it and scrape it clean while it is still warm.
