Keeping raw and cooked meat properly separated is the single most important food-safety habit in barbecue, and it is mostly a storage problem. Deep trays for marinading, sealed containers for the fridge, and a rule that a plate which held raw meat never touches cooked.
For marinading, a non-reactive container matters: acidic marinades pit aluminium and can taste of it. Glass, food-grade plastic or stainless are all fine. A tray with a rack lets air reach all sides of a dry-brining joint, which is what crisps skin.
