How to choose
Cast iron holds far more heat than thin plated steel, so it does not drop temperature the moment cold meat lands on it. That is what produces a dark crust rather than grey steamed lines.
Toppers solve the falling-through problem. Baskets for vegetables and prawns, a solid plate for anything small, a stone for pizza and bread. Each one extends what the cooker can do far more cheaply than a second cooker.
