How to choose
Length is the specification that matters. Standard kitchen tongs put your hand directly over a fire that may be running at 300°C. Anything you use over live coals wants to be at least 40cm.
Beyond that, stiffness beats features. A spatula that flexes cannot get under a crust, and springy tongs cannot hold a pork shoulder.
