Ceramic is a heat battery. Once the mass is up to temperature it resists change, so wind, rain and a lifted lid barely move it. An eighteen hour brisket on a single basket of lump is routine, and fuel use is a fraction of a steel cooker.
The trade is weight, price and responsiveness. Once a kamado is running at 200°C you cannot bring it down quickly, so you commit to a target and creep up to it. Use lump only: briquette ash clogs the base vent.
