How to choose
A plancha fire pit is a wood-burning bowl with a flat steel cooking ring around the rim. The centre gives you an open fire to gather round; the ring gives you a plancha surface heated from the flames below, hottest near the middle and gentler at the edge.
That heat gradient is the whole appeal: sear in the centre, hold and keep warm at the rim, all on one fire. They are heavy, they want seasoning like a giant pan, and a rain cover is essential or the cooking surface rusts.
