How to choose

We are a charcoal site and we are not going to pretend gas tastes the same. It does not: charcoal runs hotter, and dripping fat vaporising on solid glowing fuel is where most of the flavour comes from.

What gas genuinely wins on is a Tuesday. Ten minutes from cold, precise low and medium control, no ash and no disposal. The honest answer for a lot of households is a cheap kettle for weekends and a gas grill for weeknights, and the food cooked is better than the food not cooked.
