How to choose

Constant rotation does two things nothing else does: it bastes the meat with its own rendering fat continuously, and it removes the hot-side problem entirely because no face sits still over the fire. That is why rotisserie chicken skin renders so evenly and why porchetta crackles all the way round.

You can buy a dedicated rotisserie cabinet, or add a rotisserie ring to a 57cm kettle for a fraction of the price. The ring is the sensible route for most people and doubles as the closest thing to a Cypriot foukou you can bolt onto a grill you own. Look for a motor rated for the weight you actually cook, and a counterweight for unbalanced loads.
