How to choose

Asado cooking inverts the usual control system. There is no lid and there are no vents; you build a wood fire, rake embers under the grill, and control the heat by winding the grate up and down with a wheel.

It demands attention and rewards it. A proper asado is a several-hour occasion where the fire is maintained continuously and embers are fed under the food as needed. Look for a V-groove grate that drains fat away to a channel rather than onto the fire.
