What a pellet grill is

A pellet grill is effectively an outdoor convection oven fuelled by compressed wood pellets, with a thermostat and an auger that feeds fuel automatically to hold a set temperature. You dial in a number and walk away. For hands-off, set-and-forget cooking it is genuinely excellent.

Where pellet wins

  • Convenience: set a temperature and leave it, even overnight.
  • Consistency: it holds a steady heat with no skill required.
  • Ease for beginners: no fire management to learn.

Where charcoal wins

  • Searing: pellet grills struggle to reach the fierce heat charcoal hits easily.
  • Smoke flavour: pellets produce a milder smoke and a fainter ring than charcoal and wood.
  • Cost and simplicity: no electronics to fail, no power needed.
  • The craft: managing a live fire is, for many people, the whole pleasure.

The honest verdict

If you value convenience and consistency above all, and you smoke more than you sear, a pellet grill is a fine choice and no one should sneer at it. If you want the fiercest sear, the deepest smoke and the satisfaction of a fire you built, charcoal wins. Many serious cooks own both, and use each for what it does best.

On flavour

Pellet grills do produce real smoke, but less of it, and the results are cleaner and milder than charcoal and wood. Whether that is a feature or a flaw depends on how smoky you like your barbecue.
