Kamado Joe Classic Joe III 18" Review
The most complete ceramic cooker you can buy without going commercial. Ceramic walls hold 120°C (250°F) overnight on one load of lump, and the same cooker will hit 400°C (750°F) for pizza.
- Holds temperature overnight on one fuel load
- 105°C (225°F) to 400°C (750°F) in a single cooker
- Divide and Conquer multi-level grates
- Very low charcoal consumption
- Heavy and expensive
- Slow to lower temperature once overshot
- Ceramic is vulnerable to thermal shock
- Lump only, briquette ash clogs the base

What ceramic actually changes
Thick ceramic is a heat battery. Once the mass is up to temperature it resists change, so wind, rain and a lifted lid barely move it. An eighteen hour brisket on a single basket of lump is routine, and fuel consumption is a fraction of a steel cooker because you are not constantly reheating thin metal. The airtight seal is what makes that possible, and it is also what lets you snuff the fire and reuse the unburnt charcoal next time.
The system around it
Divide and Conquer is the genuinely useful part: a cast iron carrier holding half-moon grates at two heights, so you can run direct heat on one side and indirect on the other, or two heights at once. The SloRoller insert is a baffle that circulates smoke in a rolling pattern at low temperatures, and it does measurably improve smoke deposition under 150°C (300°F). The air lift hinge means the heavy lid opens with one finger.
The case against
It is heavy, expensive, and slow to change temperature. Once a kamado is running at 205°C (400°F) you cannot bring it down to 120°C (250°F) quickly, so you commit to a target and creep up to it. Ceramic can crack if thermally shocked, and the gasket is a wear item. For a first charcoal grill this is far too much cooker.
